Low Carb Eggplant Parmesan Bites

Ingredients:
- eggplant
- salt/pepper to taste
- 1 egg lightly beaten
Herb and Cheese Crust
- 1/4 cup almond meal
- 1 tbsp dried herbs of choice
- 1/2 cup shredded cheese
- 1/4 cup shredded parmesan
Instructions
- Place sliced eggplants on oiled (coconut oil) baking tray, sprinkle each one with salt and pepper
- Grill or bake 350 degrees until browned
- Mix all herbs and cheese crust ingredients in small bowl
- Remove from oven and turn each slice over and sprinkle with more salt and pepper.
- Grill until just turning brown and cooked.
- Remove from oven
- Brush top of each eggplant slice with beaten egg.
- Sprinkle the herb and cheese crust then place back in oven/grill until cheese is melted and/or beginning to brown.
- Serve with sour cream or garlic mayonnaise (we recommend avocado oil mayo) as a side sauce
- Enjoy
