Low Carb Eggplant Parmesan Bites

Serves 10

Ingredients:

  • eggplant 
  • salt/pepper to taste
  • 1 egg lightly beaten

Herb and Cheese Crust

  • 1/4 cup almond meal
  • 1 tbsp dried herbs of choice
  • 1/2 cup shredded cheese
  • 1/4 cup shredded parmesan

Instructions

  1. Place sliced eggplants on oiled (coconut oil) baking tray, sprinkle each one with salt and pepper
  2. Grill or bake 350 degrees until browned
  3. Mix all herbs and cheese crust ingredients in small bowl
  4. Remove from oven and turn each slice over and sprinkle with more salt and pepper.
  5. Grill until just turning brown and cooked.  
  6. Remove from oven
  7. Brush top of each eggplant slice with beaten egg.
  8. Sprinkle the herb and cheese crust then place back in oven/grill until cheese is melted and/or beginning to brown.
  9. Serve with sour cream or garlic mayonnaise (we recommend avocado oil mayo) as a side sauce
  10. Enjoy
